Obstinate and stubborn are the words we commonly use to describe a person who firmly sticks to his opinion and cannot be easily overcome.

Intractable can also be used to describe a similar person who is headstrong and can’t be easily controlled or directed.
It’s difficult to convince the boss on any change of plan. He is intractable.
